“I really like the ten inch length of this model. It permits a long stroke, which is helpful with longer bladed kitchen knives or big Bowies. The soft arkansas stone is a moderately aggressive abrasive so it removes steel fairly quickly. However, the pores in the stone tend to load up after a knife or two. At this point it won't sharpen well unless you clean it. I use hot water, some grease-cutting detergent, and a Scotch-Brite type pad. It doesn't take more than a minute to clean. After cleaning, I apply a small amount of fresh honing oil. You could probably also use a little water if you don't like to use oil.
I also have the hard arkansas and the translucent stones for really fine polishing.”
