Answer M would fit sizes 7.5, 8 and 8.5 (US) but I would encourage you to go for the XL for maximum comfort as the M felt restrictive for me (my toes, that is).

Answer You can machine wash and dry these socks. I would recommend a lower heat setting. I love my ski socks and they do not itch at all.
