i am a great consumer of crepes. i am making them for decades with a vatiaty of appliances. never in my mind i would've thought that a german made crepe pan will end up as the "best in class" in my opinion.
why is that? first the way is made and the mass at the bottom assures the even heat distribution and having the right metals and mass the pan does not "cool" when the cold mix is poured on to it. second, the surface is an absolute 'non-stick'. the diamind composit of the fryig surface requires no oil at all. i start putting a little butter only for flavor.
finally the balance is perfect. one other nice to have with this pan is that on a side the 'side lip' is only about half the height of the rest of the the all around 'lip' so when done you can just slide easier the crepe on the plate.
Excellent, excellent, excellent.
as to sierra, their prices are excellent, delivery is always reliable and quick, service is second to none. after buying the woll crepe pan i also purchase the titanium grill and the saute pan, just because i was as impressed by the crepe pan.
