This is a first rate, high quality chef"s knife. I bought it as a backup to my old favorite, an 8 inch Wusthof Grand Prix, which is also an outstanding tool. Until I got this knife, I had never found an equal to the Wusthof. This knife is now the one I reach for first.

    Ever left you chef's knife at a vacay? Yes. So this knife is the all-around replacement. The number one knife in your kitchen. It's quite sharp, although an experienced cook should be able to get it to a keener edge. I'm not necessarily that guy. If you use a knife like this a lot, you'll be cleaning it a lot because the concave divots collect food, especially soft veggies. They also allow for very smooth chops. And, the knife is heavy. Awesome for chopping, not great for small people or small hands. But if it fits, it will probably be your favorite knife.

    This knife is both beautiful and high quality with a very sharp edge. I'm giving it four stars instead of five because of the weight - it is heavy. The handle is also larger than my other Henckels knives. It is perfect for my husband, and would work well for people with larger hands.

    The blade is super sharp and cuts almost without effort. The heft of the handle aids this and also shifts the balance of the knife toward the handle. Some may find this disconcerting, I did at first, but I found that I quickly adjusted and had no trouble controlling the blade easily. I am skeptical about scalloping on knife blades, and this knife is scalloped. I have never found that scalloping works the way it is supposed to. I did notice that food tends to adhere to the blade less on this knife than the Wusthof. Scalloping? Maybe it works, maybe not.

    If you are looking for a superior grade 8 inch chef's knife, this should be one of a very few you consider. It is clearly one of the best.

    I like the heavier weight of this knife. It's a great addition to my go-to cooking knives.

    Having owned this knife, i gave one in total confidence as a gift. Needless to say, the recipient was overjoyed when the knife was unwrapped. It retains its sharp edge and is easy to hone when needed.
