Chicken and Stuffing: Easy Backpacking Meals

When searching for great tasting backpacking meals, look no further than your favorite thanksgiving dinner.  In this installment of our outdoor meal series, we feature a great backpacking meal called Chicken and Stuffing. Backpacking Meals = Chicken and Stuffing

At home:

Mix the following ingredients into a sealable plastic bag.

  • 1 Cup Stove Top Stuffing

  • 2/3 Cups dried cranberries

  • Add salt and pepper to taste

On the Trail:

Bring 1/4 cup of water to a boil. Add the above ingredients to the boiling water and let cook for 10 minutes. Add 1/2 a can of chicken breast or enough pouched chicken so it is blended at the desired amount of chicken.

I used this recipe with my son's scout troop tonight as a demo for an upcoming camping trip and they loved it. Nice job
