It is warming up and we are making plans to sleep out under the stars. There is one thing we need to think about before our first camping trip of the season and that is what are we going to eat at the campsite? Well, we've got you covered in our Campsite Cooking Series. We've got easy to follow backpacking recipes, car camping food and dutch oven meals. This week we've got a recipe for dutch oven breakfast burritos that is sure to be a car camping hit.

Campsite Cooking: Dutch Oven Breakfast Burritos

In this week's Campsite Cooking Recipe we are featuring Dutch Oven Breakfast Burritos. This is a favorite of mine for an easy car camping breakfast. You can make the breakfast burritos at home, wrap them in foil and throw them in the cooler. A wrapped breakfast burrito doesn't require plates or silverware like cooking eggs or other breakfast foods at the campsite, which makes this a very easy campsite breakfast.

This recipe tastes great, is easy to cook at the campsite and is sure to fill everyone up for a great day hike or whatever you plan to do on your family camping trip. The dutch oven or cast iron pot is an easy way to cook while camping. You can easily cook dutch oven breakfast burritos by stoking the coals from the night before or by using charcoal.

What you'll need:

  • Tortillas

  • Scrambled eggs

  • 1/2 cup shredded cheese

  • 1/2 cubed potatoes

  • 1/4 cup green chili

  • Dash of hot sauce

  • 4 strips of bacon or sausage

At Home:

Scramble eggs and cook meat. Add the ingredients into the tortillas. Wrap in foil and keep cool.

At Campsite:

Heat coals of fire or light charcoal. Place warm coals under and over the dutch oven. Rotate the oven every few minutes and flip burritos half way. Total cook time is 20 to 30 minutes depending on the temperature of your dutch oven.
