I usually wear a 9.5-10 and bought the 9.5. I adjusted the heal strap to the last hole and the leather on the top off the foot is no problem at all and I have large feet. They are secure and don't slip around at all. No rubbing anywhere. Good arch support yet flexible bottoms. Good traction. Cute too! I would highly recommend these shoes.

“Do these have a good cushioned sole? I have problems with left foot and need lots of cush. I also need the toe strap for a problem bunion/overlapping big toe, plus a Morton's neuroma. sigh.”
Sorry to say these would not be the best sandals for you. The would not have enough cushion and no toe strap.
“How do these handle water?
Do they stay soaked and squishy due to the cork bottom? Or are they fairly adaptable and dry fairly quickly?”
They would not do well in water, they are made with distressed leather it is not likely to dry fast.
